Eating healthier DOES NOT have to mean eating MORE EXPENSIVELY. When I was a poor college kid, working hard at a low-paying job and putting myself through school (scholarship covered the cost of school but didn’t cover living expenses or leisure) I learned something about nutrition costs. $$/meal was an important number. You could get that pretty low with things like rice and beans. But I was also lifting and running while working 80-90hrs/week over the summer and needed more than just relatively empty calories so I focused on low cost protein and veggies. Breakfast - 3 Eggs and bowl of oatmeal Snack - Water, a whole carrot, and a pack of tuna Lunch - 2 Wendy’s grilled chicken wraps Snack - Water, saltines, and whatever fruit was on sale. Dinner - 1-2 servings of Ground beef (or turkey or chicken thighs) and a serving of sautéed frozen veggies. Daily food cost ~ $6-$8 Now that I’m a father and I’ve learned a thing or two about cooking a nice dinner — my staples are the same! (ALSO, I don’t depend on Wendy’s for lunch anymore!) I know it’s difficult to find the right combination of nutrition and cost but if you take the time to look and plan — even with a family — you’ll find there are good, cost-effective alternatives!
